Raw Recipe: Carrot Bliss Balls

I’ve been bombarding you with some lengthy, info-packed articles for a bit, so today I thought I’d take a break and share with you a favourite raw recipe of mine.

Carrot bliss balls

These babies are very popular with kids and adults alike, they’re super easy to make, low fat and are 100% goodness in every bite!  The combination of carrot, walnut, ginger and spices is just superb.

All you need is a food processor.  Give them a try and let me know what you think.  I guarantee you won’t be disappointed, and if you are, you can mail them to me!!

Carrot Bliss Balls

Ingredients (makes about a dozen energy balls):

  • 180g or 11 medjool dates (if you use smaller dates than Medjool then follow the gram measurement and soak them for about an hour prior to making)
  • 260g or 2 cups grated carrot
  • 25 to 30g or ¼ cup walnuts
  • 1 small chunk ginger (about 7g)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp vanilla essence or powder
  • dessicated coconut

Grate the carrots and chop the ginger.  Discard soak water, if you’ve soaked your dates.  Combine with the remaining ingredients (except the coconut) in a food processor and blend to form a sticky mixture.  Shape into balls and roll each in the dessicated coconut. Set in the freezer for an hour to firm them up… and you’re ready to serve.

These can be stored in the freezer for a Looooong time – so make a massive batch.  They’re great for school lunches!
