Yesterday I had the pleasure of meeting the adorable Jeevi the Laughing Chef at a vegan workshop where he was preparing some gorgeous raw and cooked vegan foods. This recipe is a version of the smoothie he made for us, which was absolutely divine. He uses chard and spinach, neither of which I had in my fridge, so I substituted celery and mixed baby greens and it still tasted wonderful!
Chia Green Smoothie
2 ripe spotty bananas (if you use frozen ones it will give it a creamy, thickshake texture)
2 stalks of celery
1 cup of mixed salad leaves (mesclun)
1 tblsp chia seeds
1 cup water
Blend and enjoy!
Some interesting facts about Chia that you might not know…
- 5 times more calcium than milk
- 3 times more iron than spinach
- Great source of vegetarian Omega oils
- Very high in fibre (soluble and insoluble)
- Great source of protein with 18 amino acids, including all the 8 essential ones!
