This RAWmazing Salad has become one of my mainstays in Summer, Autumn & Spring (and basically whenever I can buy mangos, or keep a bunch frozen in the deep freeze 🙂
Amazing Asian Mango Slaw
For this awesome slaw you’re going to need a mandolin slicer or something that can cut very thin slices:
3 cups of Wombok (White Asian Cabbage)
2 cups of purple cabbage
2 cups of bean sprouts (the kind you find in Asian stir-fries)
about 4 small mushrooms
1 cup of finely chopped fresh mint
1 cup of fresh cilantro
1 red bell pepper
Some tamarind (optional)
Directions – finely slice all vegetables and the apples (except for the bean sprouts) and mix in a large salad bowl.
2-3 large mangos
2 cups of cherry tomatoes
Juice of a whole lime
Some lime zest
1-2 small red chilles (deseeded)
a small chunk of fresh ginger root (2cm)
Blend, pour over salad, mix through and serve!
Garnish with mint and cilantro.
